Production Details Single-parcel wine from Les Chaillots in Écueil, planted in 1969; grass cover is controlled by plowing and the parcel is cultivated without chemical fertilizers, insecticides or other synthetic products. The juice entered locally sourced oak barrels at harvest and remained there until tirage after slow maturation and natural stabilization. Malolactic fermentation was partial. Tirage under cork with a staple took place in April 2020, followed by more than three years on the lees before disgorgement. Production comprised 1,800 numbered bottles.
Tasting Notes Straw yellow with silver reflections and fine, rapidly rising bubbles; aromas of apple, pear, white cherry, candied citrus, lemon, dried fruit, vanilla and toasted or roasted notes; full and fleshy yet fresh, rounded and silky, with an exotic-fruit tang and a persistent toasted finish.
Food Pairing Gilthead sea bream with fennel; capon stuffed with figs; mushroom omelet.
