Production Details Current producer specification: the lightly clarified juice goes directly into wood; the wine spends its first year on natural lees, blending and tirage occur in July, and secondary fermentation is followed by at least two additional years of maturation on laths. Bottles are manually disgorged nine months before sale. Alliance additionally describes gentle bâtonnage and reports finished residual sugar as a non-exact 2–4 g/L range. A November 2023 reviewed release had 3 g/L dosage and was disgorged in February 2023. An undated Valkyrie NV sheet instead lists 12% ABV, 4 g/L dosage and disgorgement six months before release; because it provides no base year or release date, those conflicting figures are retained only as release-uncertain context.
Tasting Notes Harmonious and fully rounded; the Vinous 2025 review of NV (2022) describes lemon confit, marzipan, tangerine peel, mint and chalk, with broad, ample palate presence
Food Pairing Smoked-salmon canapés, vegetable crudités with creamy dips, or light salads
