Production Details The Pinot grapes are sorting-table selected, partially destemmed and macerated for 2–3 days before saignée. Natural alcoholic fermentation with indigenous yeasts takes place in tank and concrete eggs, followed by malolactic fermentation and nearly one year of lees maturation. Tirage occurs at the end of July, followed by at least two further years in the cellar; disgorgement is about six months before release. Alliance additionally specifies gentle bâtonnage, no filtration or fining, and no oak ageing. A reviewed bottle of the 2021-based release was disgorged in February 2024 at 2 g/L dosage; that date is bottle/release-specific and is not generalized to the entire NV cuvée.
