Production Details Release context: NV. Selected grapes are sorted and destemmed before entering stainless-steel vats. Maceration lasts 48–72 hours depending on the harvest. The stated ideal cellar ageing is a minimum of 5 years, and the recommended serving range is 8–10°C. Pinot Noir is hand-harvested and hand-sorted, destemmed and placed in a maceration vat. Temperature-controlled maceration lasts 48–72 hours, with free-run juice pumped over the cap every 8 hours. Free-run and lightly pressed juices are removed and fermented separately. The bottled wine ages at least 5 years in the cellar, or 6 years for magnums. The September 2021 Butterfly announcement describes a reusable decorative robe around Cuvée Rosé, not a different wine or harvest vintage. It says the wine complies with Viticulture Durable en Champagne and Haute Valeur Environnementale specifications; this is the scope of the producer statement, without an independently inspected wine certificate.
