Production Details The wine comes from a single Chavot parcel planted by Thierry Laherte in 2003; Polaner's current release record places it behind the winery and reports natural/biodynamic farming. The seven varieties are harvested and pressed together. The producer sheet describes hand harvesting at full ripeness, traditional pressing, natural alcoholic fermentation in barrels, fine-lees ageing with regular stirring, and hand disgorgement. The Polaner producer profile separately describes six months of ageing with lees stirring. For historical context, Vine Trail's base-2015 bottling comprised 60% 2015 and 40% perpetual reserve from seven older Burgundy barrels, was disgorged in February 2018, and was non-dosé. Release specifications have changed or remain source-conflicted: the undated producer PDF says malolactic fermentation occurred and gives 4 g/L dosage, while the current producer page gives 2.5 g/L and the current Polaner release says no malolactic fermentation.
