Production Details For the base-2023 release, grapes were hand-picked fully ripe and traditionally pressed; alcoholic fermentation occurred in foudres and barrels with regular lees stirring, followed by partial malolactic fermentation and seven months on lees in barrels and foudres before bottling. The blend contains 50% reserve wines aged in concrete tanks and was bottled without filtration. The producer’s undated technical sheet instead describes the reserve wines as aged in barrels on lees and describes malolactic fermentation without the importer’s partial qualifier; it also records approximately 30-year-old vines, minimal sulfite use and hand disgorgement. These vessel and malolactic descriptions are retained as release/source-specific differences rather than reconciled.
