Production Details The current producer specification uses approximately 35-year-old vines and 50% reserve wines from previous vintages matured in barrels on lees. Grapes are hand harvested at full maturity and traditionally pressed; alcoholic fermentation occurs in small foudres and barrels with some bâtonnage, followed by partial malolactic fermentation, fine-lees ageing and hand disgorgement. A June 2025 disgorgement listing records 50% reserve wine, approximately 36 months of ageing and zero dosage; these are retained only as that release’s context. A 1.5 L base-2019 release disgorged in October 2022 is described as a three-vintage blend with up to 40% reserve wine, primary fermentation in barrique, foudre and tronconical cask, and just over two years in bottle. The differing reserve-wine proportions are release-specific and are not collapsed into one invariant percentage. The current SAQ SKU reports 12.5% alcohol and 2.1 g/L sugar but warns that product details can vary by received lot, so those figures are preserved here rather than proposed as lot-independent canonical analytical values.
Tasting Notes Peter Liem: citrus and apple fruit, dried mango, preserved ginger, and an emphasis on soil and place; the producer characterizes the current cuvée as pure and light.
