Production Details The importer technical sheet states that 22% is withdrawn annually from a solera with two criaderas; bottles age 5–6 years before disgorgement; dosage varies from 0–4 g/L; and average production is 275 cases. Its estate-wide technical notes describe primary fermentation in 228 L Burgundy barrels, 400 L fûts and 600 L demi-muids; malolactic fermentation is allowed to occur or not as each lot evolves; wines are held one year in barrel, with new barrels comprising 16% of the annual barrel rotation; reserve wines spend one year in foudre before moving to stainless steel. A 2024 trade list records a particular 26 April 2023 disgorgement at 1.33 g/L dosage with an assemblage spanning 1986–2015; that release-specific dosage and disgorgement date are not generalized to all Substance bottlings.
