Production Details Release disgorged October 2022: direct pressing, indigenous-yeast fermentation in barrels, eight months in previously used barrels, five years on laths, manual disgorgement, no filtration or fining, a small SO2 addition, and dosage no greater than 1.5 g/L. Œnopole calls its blend “6 vintages (2010 to 2016),” but that count conflicts with the seven calendar years in the stated inclusive range, so the component years have not been normalized. Bibendum’s base-2016 release, disgorged on various dates in 2021, is instead described as three successive vintages, six or seven years on lees, and dosage between 0 and 1.3 g/L. Rare Wine Co’s general producer sheet reports primary fermentation in 228 L Burgundy barrels, 400 L fûts and 600 L demi-muids; malolactic fermentation is allowed to occur or not by lot; wines spend one year in barrel while 16% new barrels enter the rotation annually; reserve wines spend one year in foudre before stainless steel. Its V.O. specification reports five years before disgorgement and approximately 1.5 g/L dosage.
