Production Details In a wine region as far north as Champagne, viticulture can sometimes prove to be a delicate process, as inclement weather conditions can complicate the ripening process. On the other hand, when the weather is good, the vineyard manager can be rewarded by wines of incomparable quality. It is this very accentuated vintage character that sets northerly viticulture apart. Only in an exceptional year does Jacquesson create an assemblage from some of its best casks of Grand Cru wines, to which we sometimes add the best parcels of Dizy, a Premier Cru, to create a vintage wine aiming to give full expression to the unique, outstanding character of the year in question. 2000 was notable for a very high average temperature, the highest since 1956. The winter was mild and dry with no snow. In spring there were no morning frosts that might damage the vines but several hailstorms. Flowering took place under a hot June sun but in July conditions worsened: cold weather, constant rain (21 days) and hailstorms. August was hotter but still rainy with persistent hail. Many vines turned yellow, there was a high presence of mildew and the danger of grey rot. At the end of August the weather improved and remained good throughout September. This allowed the region to bring in a harvest of quite substantial size picked in sunny conditions. Thanks to the House's meticulous viticultural practices, which focus on producing a moderate quantity of bunches that are well ventilated, our grapes were able to ripen in optimal conditions and picking began on 18th September. The quality of the crop was very high and the musts measured around 10 degrees of potential alcohol combined with a tartaric acid content of around 7.5 g/l. Our first tastings of the vins clairs vinified in casks showed a high standard of quality throughout the regions and the grape varieties. The wines were racked promptly to retain the fine lees and followed by several months of weekly batonnage. There after, we took advantage of the first cold days of winter to clarify the wines naturally. The chardonnay tasted combined with fine expressions and at the beginning of June we decided to produce an assemblage composed of the Chardonnays from Avize Champ Cain (50%), a selection of Pinots Noirs from Verzenay (30%) and Dizy (20%) and the Pinots Noirs from Ay Vauzelle Terme (10%).
