Production Details Harvest must measured 11 degrees potential alcohol and 10 g/L acidity; these are must readings, not finished-wine alcohol or acidity. The vins clairs were vinified in oak foudres, lightly racked so that fine lees remained, stirred on the lees for three months, and naturally clarified using late-winter cold.
