Production Details Bottled at the end of the spring following the harvests, followed by at least four years of cellar maturation. After disgorgement, bottles return to the cellar for at least six months so the dosage can integrate. The current producer specification gives a dosage range of 6–8 g/L. The Louis Latour Agencies record additionally reports acidity of 7.8 g/L, but it does not identify the acid-equivalence basis, so that measurement is not proposed as canonical total acidity.
Tasting Notes Luminous golden appearance; fresh and fruit-led nose with lemon-meringue tart, mirabelle plum, plum, light honey and toast; generous volume, structure from Pinot Noir, hawthorn, white flowers and fine citrus-supported acidity.
Food Pairing Aperitif or throughout a meal; suggested pairings include gougères, cheese pastries, pâté en croûte, poule au pot, poultry with cream, Comté and Parmesan.
