2015 Technical Specifications

Grape Varieties 55% Pinot Noir; 45% Chardonnay
Region Champagne
Soil Kimmeridgian chalk
Pressing Method Very-Low-Pressure Plate Press; Exclusively First-Press Juice
Dosage 4.2 g/L
Unfiltered Yes
Serving Temperature 8°C · 45°F
Production Details Sustainable and organic farming; the sheet describes the estate as certified organic since 2014 without establishing that every component of this wine was certified. Vinification used gravity transfer and natural settling; the wine was not decolorized and received very little sulphiting. The producer specification states that 100% of the wines were aged in casks, followed by nine years of bottle ageing; its 4.2 g/L dosage liqueur was matured in wood for 15 years. Conflicting release context is retained separately: the importer’s current page associates the September 2025 launch of the 2015 with 3.5 g/L dosage and a dosage liqueur aged 25 years, while a Jeb Dunnuck review reproduced in the importer PDF describes its tasted bottle as 60% oak, 3–4 g/L dosage and disgorged in October 2024. These importer observations are not generalized as vintage-wide dosage, oak proportion or disgorgement facts.
Tasting Notes Woody and toasted aromas with vanilla; generous, warm palate with curry-like spice, buttery texture, balanced freshness and an elegant finish
Food Pairing Aperitif; scallop carpaccio; truffle-infused Brillat-Savarin
Critics Ratings Jeb Dunnuck 96 points; James Suckling 95 points; The Drinks Business Gold

2012 Technical Specifications

Region Champagne
Soil Kimmeridgian chalk and marly limestone
Pressing Method Very-Low-Pressure Plate Press; First-Press Juice
Dosage 4.5 g/L
Unfiltered Yes
Serving Temperature 8°C · 45°F
Production Details Sustainable farming and natural settling with gravity-fed vinification; not decolorized and very lightly sulphited. The sheet describes the estate as organically certified since 2014, which does not establish certification of the 2012 crop. Thirty-five percent of the wines were aged in casks, followed by nine years of bottle ageing; the dosage liqueur was matured in wood for 15 years. The importer reproduces the 4.5 g/L producer specification, but its Wine Advocate excerpt describes the reviewed bottling as disgorged with 4.9 g/L dosage; that reviewed-bottle value is retained as contextual disagreement and not emitted as vintage-wide dosage.

Food Pairing Aperitif; crayfish-and-grapefruit broth; poached turbot with hollandaise; scallop carpaccio; lamb with foie gras; truffled Bresse poultry; aged mountain Comté
