Production Details Sustainably cultivated fruit was processed with a very-low-pressure plate press; only the first pressing was used, with gravity handling and natural settling. The wine underwent malolactic fermentation, was not filtered and was very lightly sulphited. It was matured entirely under wood in a Tronçais-oak foudre and barrels sourced from the Temple forest, followed by five years of ageing sur lattes (bottles stacked on laths).

Production Details Sustainable and organic methods were used. Grapes underwent mechanical low-pressure pressing, with only the first press retained, gravity handling and natural settling. Malolactic fermentation followed; the wine was not filtered and had very low sulphites. It was matured entirely in oak before bottling and then aged for four years on the lees.

The wine underwent malolactic fermentation, was neither filtered nor decolorized and was very lightly sulphited. Sixty percent of the base wines were matured under wood, followed by 36 months of bottle ageing.
