Production Details Current standard NV specification: vinified by gravity after natural settling, not discoloured, with 40% reserve wines, 5% of the wines matured in oak casks, and very little sulphur. Bibendum's NV release information adds three years in the cellar and six months after disgorgement; these durations are retained as stated rather than converted to exact days. For the separate Immersion gift-box release, the wine was based mainly on the 2017 harvest with 2016 and 2015 reserve wines and bottled in April 2018; after the two comparison bottles shared the same course through their third year, one was placed at Ar Pommellou at 31 metres depth on 4 October 2020 for 646 days. That limited release states dosage of 6 g/L, so it is not generalized as the NVXX dosage. An older producer sheet for an otherwise unassigned NV release states dosage of 6.5 g/L, while the current producer sheet states 5 g/L.
