Production Details Rosé produced by blending 13-15% still red wine from Hautvillers, Aÿ and Bouzy vineyards. Red wine undergoes 10-15 day maceration with punch-down techniques and CO2 protection. Base wine fermented in stainless steel tanks using cultured house yeast strains (2 strains for first fermentation, 2 for secondary). Full malolactic fermentation completed. Released June 2023 after 13 years aging. First Plénitude rosé. Born from warm, dry, sunny summer with perfect August and warm harvest conditions starting September 11, 2009.
