Production Details The current producer specification gives 3 years of cellar ageing. For the base-2021 release, a trade technical sheet records 6.5 g/L dosage, 3 years of cellar ageing, cold maceration and gentle extraction. A separate archived Gonzalez Byass UK NV sheet, whose base year is unidentified, instead records 9 g/L dosage, 25–40% reserve wines, 3 years on the lees plus 6 months after disgorgement, and volatile acidity of 0.28 g/L. Scherer's 2020 sheet describes complete fermentations, traditional secondary fermentation in bottle, stainless-steel maturation and then at least 3 years on laths before market. UniVins' sheet viewed 2021-01-16 describes almost 3 years on lees and recommends serving at 7–8°C. The differing dosage and maturation figures are preserved as release-specific records, not one timeless specification.
Tasting Notes Current release: bright pale pink; crisp blackcurrant jelly, garden strawberry and blueberry, with yellow apple, rhubarb and violet; redcurrant-led palate, black pepper, minerality, crispness, purity and intensity.
Food Pairing Aperitif; salmon with mushrooms; beef carpaccio; duck with red-berry sauce; roast lamb chops; fresh creamy cheeses such as Chaource or Brillat-Savarin.
