Production Details The base-2021 release contains 57% reserve wine and is stated to receive 3 years of cellar ageing. The current producer brochure likewise specifies reserve wines from selected vintages and 3 years of cellar ageing. A generic earlier Scherer sheet, not tied to the base-2021 release, records complete fermentations, secondary fermentation in bottle by the traditional Champagne method, maturation in stainless steel, and then at least 3 years on laths before release.
Tasting Notes Deep to rich gold with extremely fine bubbles; expressive hawthorn and white-flower aromas followed by toasted bread, marzipan, apple and pear; fresh, rounded and vinous on the palate with a silky texture and lingering fruity finish.
Food Pairing Aperitif; shellfish; lightly sauced fish; citrus-crusted dorade tartare; tender poultry; vegetable risotto; or truffled Brie.
