Production Details After first fermentation, the wine was racked to separate the primary lees and underwent malolactic fermentation. Following blending, it was bottled with selected yeast for the second fermentation, then cellared at about 10°C for five years before disgorgement in 2024. The importer’s finished-wine technical details also report “Acidity 5.4 g/L” without identifying the acid-equivalent basis, so that measurement is not proposed as unqualified total acidity.
Tasting Notes Deep copper hue and lively bubbles; peony, rose, violet and white musk, followed by blueberry, blackberry, raspberry, pomegranate, lemon and blood orange; a generous, refined palate with red and black berries, citrus and exotic fruit, ending with peppery, tangy notes of liquorice and tea.
