Production Details A historical demi-mousse method is employed: less sugar and yeast are added at tirage than for standard Champagne, producing approximately 4.5 bar of pressure rather than the usual 5–6 bar. The wine matures for four years on its lees and for at least ten months after disgorgement; the bottle's disgorgement date is printed on its back label. Recommended serving temperature is 8–9°C. Bottle-specific historical context: a La Revue des Vins de France review reproduced on the producer sheet concerned a bottle disgorged in June 2018, while a Wine Spectator review reproduced by Atlas Imports concerned a bottle disgorged in October 2016; neither date is generalized to all NVXX releases.
Tasting Notes Very pale and bright with green tints and fine, light effervescence; aromas of lime, grapefruit and white flowers develop almond and toast; the lively palate shows citrus, white-fleshed fruit and chalky minerality, ending fresh and long.
Food Pairing Shellfish, especially oysters; fish; or an entire meal without particularly spicy or sweet dishes
