Non-vintage Technical Specifications

Grape Varieties Majority Pinot Noir; a secret proportion of Chardonnay
Region Champagne
Sites The red Pinot Noir component may come from Verzenay, Bouzy, Mailly or Les Riceys depending on the year; the Chardonnay comes from the northern Côte des Blancs
Pressing Method Exclusively First Pressings; The White Pinot Noir Component Is Pressed Rapidly With Quick Separation Of Juice From Skins
Base Wine Years Reserve wines from more than 25 vintages assembled since 1985
Production Details The current producer page states that reserve wines constitute 20–30% of the cuvée, the Pinot Noir is vinified both as white wine and as red wine through prolonged skin maceration, and maturation comprises three years on lees followed by at least six months after disgorgement. The producer's downloadable technical sheets instead specify five months after disgorgement and dosage below 6 g/L. The conflicting five- versus six-month specifications are retained as document/release variation; neither duration is converted to exact days, and the dosage bound is not presented as an exact numeric dosage.
Tasting Notes Coppery rose with a raspberry tint when young, becoming salmon with age; redcurrant and tart red fruits evolving toward morello cherry, wild strawberry and violet, with lemon, black cherry, blackberry and fig; lively attack, chalky minerality and a fresh, refined finish
Food Pairing Sushi, Parma or Iberian ham, charcuterie, poultry, selected cheeses and fresh-fruit salad; suitable through a meal except with sweet desserts
