Base Wine Years Perpetual reserve comprising 25 reserve vintages assembled since 1985; one documented historical release was based on the 2015 harvest.
Production Details Current French producer sheet: first-press juice from 32 crus vinified separately in stainless steel or barrels; reserve wines comprise 30–50%; maturation is three years in bottle on the lees and five additional months after disgorgement; dosage is below 6 g/L. The English producer sheet instead describes 35 crus, 35% reserve wine, 20% undergoing first fermentation in aged oak barrels, three years on the lees and six months after disgorgement. The current English wine page describes more than 30 crus, 20% barrel fermentation, up to 50% reserve wine and a minimum six months after disgorgement. The official Italian distributor lists manual harvesting, 32 separately vinified crus, 25 reserve vintages assembled since 1985 at up to 50%, 40 months on the lees and 3–4 months after disgorgement. A producer-hosted historical release sheet identifies a 2015-base release disgorged in August 2019. These differing ageing, cru-count and reserve specifications are retained as release/source conflicts and are not normalized into exact-day or edition-wide claims.
Tasting Notes Bright straw gold with very fine bubbles; lime, grapefruit, redcurrant, raspberry, Morello cherry and dried or exotic fruit aromas; citrus, almond, toast, redcurrant jelly, cherry, fig, blackberry, plum and pear flavors; ample, long palate with a clean finish.
Food Pairing Aperitif; Brie de Meaux, Camembert, aged Salers, poultry and shellfish.
