Production Details Current base-2023 release: 60% 2023 base wine and 40% reserve wines from the previous three vintages; the still wine ages mainly in 350 L barrels, with some 600 L demi-muids and tanks. Tirage liqueur contains 23–24 g/L sugar—this is tirage sugar, not finished-wine residual sugar—and produces close to 6 bar pressure. Bottle ageing sur lattes lasts 24–36 months. Historical format-specific records must remain distinct: Bibendum's base-2020 3 L release comprised 65% base wine plus 35% from the previous two years, fermented naturally in barrel, aged in barrel and tank, spent 36 months sur lattes and was hand-disgorged in February 2024; a quoted Galloni note gives that tasted release 5.5 g/L dosage. Its base-2021 1.5 L record comprised 55% base wine plus 45% from the previous two years, with natural barrel fermentation, barrel/tank ageing, 36 months sur lattes and hand disgorgement. That base-2021 magnum record conflicts internally: its product title says disgorged November 2024, while its prose says June 2024, and dosage is only described as around 5 g/L. Separately, the producer's Galloni note for a base-2021 release reports 45% reserve wine, 5.2 g/L dosage and November 2023 disgorgement. These bottle- and format-specific dosage/disgorgement observations are not generalized as canonical NV values.
Tasting Notes Full, burnished and complex, with autolytic biscuit aromas, substantial texture, creamy mousse, a chalky presence and a delicately saline, long, savory finish
