Production Details The grapes were harvested manually and sorted in the vineyard and on a sorting table. Following light crushing and destemming, they were placed whole in stainless-steel tanks; a small proportion of whole clusters could be included depending on fruit condition. Cold maceration lasted a few days, followed by temperature-controlled natural-yeast fermentation with pumpovers and/or punchdowns. After pneumatic pressing, the wine matured in barrels containing about 30% new wood for 10 months, during which malolactic fermentation occurred. The barrels were assembled in vat one month before bottling; the wine was not fined, received light lenticular filtration, and was bottled according to the lunar calendar. The sheet notes that aspects of the technique can vary with the vintage.
