Production Details Importer vintage documentation states that all wines were aged entirely on their lees, with gentle batonnage a few times per month and no racking during that process. Natural carbon dioxide from the long fermentations permitted little SO2. Bottling was performed manually by gravity feed when ready, after a full moon, without fining, filtration or sulphur addition at bottling.
Tasting Notes Bright lemon-yellow; reticent citrus zest, flowers and crushed rock; pristine, penetrating palate with pungent minerality, extract-rich solidity, energy and definition; razor-focused, lifted and exceptionally long finish.
