Production Details Biodynamic cultivation with complete soil working and manual vineyard work; goblet-trained vines on stakes at 10,000–14,000 vines/ha, with yields not exceeding 35 hl/ha. Whole-cluster, semi-carbonic fermentation takes place in truncated-conical wooden vats; the page says chaptalization is avoided except exceptionally, maceration lasts at least three weeks, maturation lasts at least 18 months in stainless-steel vats, and bottling uses a manual filler.

Production Details Hand harvested; only the best whole clusters were selected, fermented semi-carbonically for about ten days, then pressed slowly. This 2013 wine was matured in Tronçais oak.
