Production Details For the 2023 release, the grapes were hand harvested, carefully sorted and completely destemmed, followed by a short cold maceration and indigenous-yeast fermentation with light pump-overs and temperature control. The wine reportedly matured for approximately 12 months in oak, one-third new, then 4–6 months in stainless-steel vats. The serving recommendation is approximately 16°C, with 30–60 minutes of aeration. The one-third-new-oak statement differs from the producer's undated current wine sheet, which states 25% new barrels; the values are retained as differently scoped release specifications.
Tasting Notes Deep, luminous ruby-to-garnet colour; raspberry, blackcurrant, spice, earthy and mineral aromas; round, supple and elegant palate with soft integrated tannins, subtle oak, concentration, freshness and a persistent finish. The producer's estate-wide 2023 report independently describes its reds as expressive, fruit- and spice-driven, dense and silky.
Food Pairing Poultry in sauce, veal or other white meat, mushroom dishes such as risotto, fine charcuterie, and matured soft cheeses such as Brie
