Production Details The pressed grapes are rigorously selected and only the best juice is retained. Sixty percent of the wine is matured for around 12 months in oak barrels and the balance in stainless-steel tank; after assemblage, the blend remains in tank for an additional nine months. Natural yeasts are used, gravity is preferred to pumping, and the wine is bottled without fining or filtration.
