Production Details Seven parcels (0.5-1 ha each). 2021 frost reduced yields up to 80%. No enzymes, no bâtonnage, no racking. Cold fermentation. Aged 12 months in oak (20% new), then 4 months in stainless steel. Fined/filtered only when necessary. Organic (uncertified).
