Fermentation Vessels Wooden truncated-conical vat; concrete tank for malolactic fermentation
Indigenous Yeast Yes
Oak Types French oak
Extended Maceration Yes
Production Details The grapes were partly destemmed and co-fermented with indigenous yeast in a wooden truncated-conical vat. A long maceration lasted four weeks, followed by malolactic fermentation in concrete tanks. Maturation lasted 12 months, partly in old French-oak foudres stated as 50% and partly in French-oak barrels, with 25% new oak stated. The fruit was hand harvested and hand sorted, estate grown and bottled, and the vineyards were AB Organic certified. The same page inconsistently describes vine age as 80–100 years in its overview and 85–100 years in its selling points. Its separate “ACIDITY: 4.76” figure lacks a unit and analytical basis and therefore is not mapped to total acidity.
Tasting Notes Intense bright dark red; boysenberry, blackcurrant, spicy wood, mulberry and eucalyptus; rich and deep with precise tannins, freshness, elegance and a neat finish
Food Pairing Wild game, aged meats, and other rare or complex dishes
