Production Details The 2023 season began dry, followed by a cool spring and moderate heat until August, allowing excellent ripeness, concentration and quality. Destemmed grapes underwent traditional maceration and fermentation in concrete tanks for 3–4 weeks; each variety was vinified separately. Pumping over was used or withheld according to daily tasting, and the temperature was allowed to rise to 30–33°C at the end of alcoholic fermentation to assist tannin polymerisation.
Tasting Notes Intense ripe blackcurrant and raspberry aromas; full, generous palate with ripe fruit, soft spices and soft tannins.
Food Pairing Roast rabbit, Provençal tart or ribs of beef.
