Production Details The Sur le Muant parcel lies at 300–320 metres with south-to-southwest exposure and is co-planted with massal-selected Savagnin Jaune and Savagnin Vert. The 2022 wine was matured for three years in topped-up 228 L barrels; the élevage was extended by one additional year after the 2024 frost left cellar capacity available. Millésima additionally describes manual harvesting with sorting, whole-cluster direct pressing, spontaneous indigenous-yeast fermentation and maturation in neutral or used oak. Millésima recommends serving at 11–12°C. Vine age remains conflicted: La Route des Blancs and RVF describe approximately/exactly 10-year-old vines, while Millésima states approximately 60 years.
Tasting Notes La Route des Blancs' 2025 note describes Williams pear, perry, apple pastry, clementine, Victoria pineapple, orchard blossom, lemon leaf, fir bud, coconut milk and sweet spices, with an expressive, broad and enveloping palate balanced by citrus freshness and a saline finish. RVF describes a full, buttery and creamy attack, strong relief and intensity, bright freshness and a vibrating finish.
Food Pairing Chicken supreme with vin-jaune-and-morel sauce; pork chop with reduced cooking juices, celery purée and mustard pickles; or ricotta-and-watercress ravioli with a fresh-herb sauce
