Production Details Strict selective hand harvest was followed by very gentle, slow pressing. Spontaneous alcoholic fermentation and malolactic fermentation took place in 228-liter oak barrels with 30% new wood; the source describes an 18-month barrel period and subsequent extended contact with fine lees. The barrels were assembled in stainless steel before light fining, light filtration and bottling according to the lunar calendar.
Tasting Notes Vinocentral team note dated October 2019: quince, pineapple, a slight sea-breeze character and summer-forest aromas; dense and concentrated yet gentle in texture, with a very long, tense finish.
