Pressing Method Whole Clusters Pressed For 3–3.5 Hours Using A Short Champagne-Style Press Cycle
Production Details For the 2020 whites, the domaine used no crushing, hyper-oxidation and no sulfur during the first 48 hours. For Corton-Charlemagne specifically, the whole clusters received a 3–3.5-hour press; the must settled overnight, was racked into barrel with abundant lees, and received monthly bâtonnage after malolactic fermentation until about two months before bottling.
