Pressing Method Light Crushing Before Gentle Pressing
Production Details Grapes arrived rapidly at the nearby winery in small harvest crates, were sorted, and were vinified separately according to parcel origin; substandard lots were excluded rather than used for a second wine. After light crushing, gentle pressing and settling, fermentation took place in oak barrels. Following the first racking and blending, the wine matured in tank on fine lees through a second winter, was racked again, spent two months in bulk for homogenization, and was bottled. Bottles then rested in the domaine's cellars for several months or sometimes several years before release. Vintage-specific vineyard work included valerian preparations against spring frost, tightened treatments including silica during downy-mildew pressure, and 500P and valerian during summer water and heat stress.
Tasting Notes Precise and calcareous, with wet rock, saline, dried-fruit and hazelnut notes; ample yet straight on the palate with firm acidity, chalky minerality, texture, depth and richness.
