Production Details Manual harvest in small boxes; very slow pneumatic pressing; no chaptalization; 90-day alcoholic fermentation with temperature control. Maturation is listed as 12 months in 300 L and 600 L Vosges, Allier and Tronçais barrels—20% new and 80% one- and two-year-old—followed by 12 months in 'DAI,' an abbreviation the source does not expand. Site information gives 280–300 m elevation and a 40% gradient; neither range was converted to a single numeric canonical value. Finished-wine SO2 is listed as 120 without a unit. Vine-age evidence conflicts: the exact Cuvée 3000 release says 40 years, La Route des Blancs describes the 2021 as coming from old massal selections dating to 1960, and Becky Wasserman's wine page says planted in 1964; therefore no settled vine_age claim is proposed.
