Production Details Grapes were harvested by hand and passed over vibrating and manual sorting tables. They were destemmed but not crushed, then cooled before the temperature was allowed to rise gradually; fermentation began after 5–10 days. Vatting lasted approximately 20 days, followed by maturation in oak barrels.

Production Details Grapes were handpicked into small cases and sorted on three sorting lines; bunches were destemmed but not crushed. Extraction used pump-overs and foot pigeage. Vinification lasted approximately 20–25 days. The wine matured in oak barrels for 15–18 months with no more than 20% new oak and was bottled according to lunar cycles.
