Region Cairanne
Soil Very stony terraces comprising clay, Gravel and soft sedimentary sandstone known as safre
Harvest Dates Harvest began 19 August 2022
Vine Age A section of the vineyard was planted in the 1950s
Contains Added Sulfites Yes
Serving Temperature 18°C · 64°F
Production Details The vines are described as 100% organically cultivated. Grapes were hand-picked, immediately transported, meticulously sorted, destemmed and vatted. Fermentation/maceration lasted around 15 days, with extraction adjusted through daily tasting using pumping-over or punch-down. After maceration, the wine spent a short period in stainless-steel or concrete vats. The production section says it was not aged in wood, while the tasting text mentions well-integrated barrel ageing; oak status is therefore internally contradictory.
Tasting Notes Intense plum colour; undergrowth, dark chocolate, morello cherry, blackcurrant and spice; rich palate, silky structure, fine velvety tannins and fresh, long finish
Food Pairing Mature cheese, dishes with sauce, red meat
