Production Details Hand-picked at full ripeness and traditionally pressed; spontaneous fermentation in 228 L barrels with regular lees stirring; no malolactic fermentation; six months sur lie in barrel; bottled without filtration; then 36 months sur lattes (bottle ageing on laths). The importer describes organic farming with biodynamic methods, dynamic cover crops and reduced tillage. Release context is lot-dependent: CPHWines reports a December 2024 disgorgement at 2 g/L dosage, while the importer reproduces a Vinous note for a December 2024 bottle at 2.5 g/L and says multiple disgorgements occurred during the year. These bottle/release observations are not promoted to vintage-wide dosage or disgorgement claims. CPHWines recommends serving at 8–10°C.
Tasting Notes Vinous: vivid, layered and expressive, with dried cherry, spice, chalk, mint and game
Food Pairing Roasted red meats, game, robust poultry, washed-rind aged cheeses, fine charcuterie, richly flavoured dishes, or as an aperitif
