Production Details Grapes are manually harvested in an early first pass before the still-wine harvest. Each variety undergoes separate, low-temperature alcoholic fermentation in temperature-controlled stainless-steel tanks; the lots are then blended for spontaneous malolactic fermentation. Secondary fermentation follows the traditional method, after which the bottled wine spends 36 months on fine lees sur lattes. The fruit is certified organic.
