Production Details Grapes were carried in small harvesting containers, sorted on a table, pressed and settled. Fermentation occurred in used barrels and demi-muids, followed by one year of reductive lees maturation without added sulfur and finishing in stainless-steel tank. There was no inoculation, chaptalization or acidification; the wine was bottled unfined and unfiltered with a small SO2 addition.
