Production Details Tryffelsvinet specification: fruit from the 0.9-hectare Croix Jeanniard parcel was hand harvested, transported in 20 kg crates, carefully sorted and completely destemmed. Natural-yeast fermentation took place in stainless-steel tanks for 8–13 days with gentle punchdowns and pumpovers. The wine then matured for 12–15 months in lightly toasted old oak barrels, followed by three months in tank, and was bottled without fining and with only light filtration.
Tasting Notes Fresh and fruit-driven; wild raspberry, cherry, strawberry and blueberry, with violet, charcuterie and stony-mineral notes; light, slender body, soft tannins, fresh acidity and a long fruit-driven finish
Food Pairing Poultry, elegant white-meat or veal dishes, and butter-fried or grilled fish
