Production Details Fruit came from regional-appellation vineyards in the Côte de Beaune. Vines were Guyot-pruned with disbudding, trellising and topping. Harvesting was manual, with sorting in the vineyard and on a winery sorting table; the description says an optical sorter may be used in some years but does not establish its use in 2021. Grapes underwent light crushing and destemming before placement in stainless-steel tanks. A small whole-cluster component could be included depending on fruit condition, but no 2021 percentage is established. Cold maceration lasted a few days, followed by temperature-controlled fermentation with pump-overs and/or punch-downs, pneumatic pressing and transfer to barrels.
