Production Details Bourgogne Chardonnay from 0.9 hectares (2 parcels) in Chassagne-Montrachet. Vines aged 25 and 35 years, first planted in 1996. Yields average 50-60 hl/ha. Entirely vinified in oak pieces (20% new) with no batonnage, for 12 months, then transferred to vats for 3-4 months. Bottled without filtration. Alcoholic and malolactic fermentations carried out directly in oak barrels using indigenous yeasts. Simon Colin focuses on wines with great acidity and minimal wood influence, showcasing bright minerality and fresh stone fruits.
