Production Details Bourgogne Chardonnay from 0.9 hectares (2 parcels) in Chassagne-Montrachet. Vines aged 25 and 35 years, first planted in 1996. Yields average 50-60 hl/ha. Alcoholic and malolactic fermentations carried out directly in oak barrels using indigenous yeasts. Matured in barrel for 12 months (20% new oak, no batonnage), then transferred to vats for 3-4 months. Bottled without filtration. Simon Colin focuses on wines with great acidity and minimal wood influence, showcasing bright minerality and fresh stone fruits. Domaine is pursuing organic certification with biodynamic influences.
