Production Details At the review stage documented by VINTUS, the 2018 cuvees—including the separately listed Bourgogne Blanc—were still in barrel, unracked and without sulfur, while malolactic conversion was being deliberately prolonged; the wines held about six liters of lees per barrel. The stated house protocol was maturation entirely on lees with gentle batonnage a few times monthly, no racking during maturation, and hand bottling by gravity without fining, filtration, or sulfur addition at bottling.
