Production Details Négoce cuvée using grapes from Volnay, Mercurey and Vézelay. Each source was vinified separately. Whole bunches were macerated in tank with some CO2 added initially and underwent regular, progressively deeper punch-downs. The fruit was pressed and returned to tank to finish fermentation. The Volnay component matured in 400 L barrels, while the Mercurey and Vézelay components matured in foudres; the components were blended before bottling. The red wines were not filtered, and small sulphite additions were made after completion of malolactic fermentation.
