Production Details The 2022 wine was hand-picked into small crates, strictly sorted, partly destemmed and fermented with natural yeasts, with controlled pump-overs and punch-downs. It matured for 18 months in oak barrels, 20% new. The Daix parcels total about 1 hectare, lie above 400 m and have vines about 35 years old; vineyards are managed without herbicides. Recommended serving temperature is 15–16 °C. Separately, the producer's estate-wide 2022 report says harvest began on 31 August and extended over 15 days in the villages; this is not established as the picking date or duration for this individual cuvée.
