Production Details Hand-picked Pinot Noir from a sustainably farmed 2 ha parcel beside Château de Pommard with vines described as over 70 years old. Fruit was fully destemmed and gently crushed, followed by cold maceration and spontaneous fermentation with indigenous yeasts. Extraction used daily pumpovers and manual punchdowns. After pressing, the wine was transferred without pumps and matured for ten months in 228 L French-oak barrels, 10% new, with medium toast; it was bottled unfined and unfiltered. Recommended serving range is 14–17°C.
