Production Details The producer describes certified organic and biodynamic viticulture, manual vineyard work and horse ploughing. Grapes were hand-picked in small cases and manually sorted; one-third was retained as whole bunches and two-thirds was destemmed without crushing, with gravity vatting. Extraction used pump-overs and foot pigeage, and vinification lasted 20–25 days. Maturation was in oak barrels for 15–18 months, with no more than 20% new oak, followed by bottling according to lunar cycles.
